Coffee, Cookies & Community: Sharing My Most-Requested Holiday Recipes

holiday recipes |

During November and December, I had the great privilege (and a lot of fun!) visiting all of our Urban Nature Store locations to share coffee, hot chocolate — and a few of my homemade treats. ☕🍫

Between bird chats and winter nature stories, many of you asked the same question:

“Paul… can we have the recipes?”

Well, I’m happy to share! Below are two of the most requested cookie recipes — simple, wholesome, and perfect for sharing with friends… or keeping all to yourself. No judgment here. 😉

🥜🍫 Oat Snickers Cookies (Most Popular!)

These cookies disappeared very quickly at our stores!

Ingredients

  • 1 ripe banana, mashed
  • 1/4 cup organic peanut butter (or any nut butter)
  • 1 tablespoon pure maple syrup (optional)
  • 1 cup rolled oats (sprouted or gluten-free if preferred)
  • 1/3 cup dark chocolate chips
  • 1/3 cup chopped organic peanuts

Directions

  1. Mix the banana, peanut butter, and maple syrup in a small bowl.

  2. Stir in the oats.

  3. Fold in the chocolate chips and peanuts.

  4. Scoop onto a lined baking sheet and gently flatten.

  5. Bake at 375°F for 10–12 minutes.

  6. Remove from the oven, sprinkle with flaky sea salt (optional but recommended), and enjoy.

🍌🌾 Banana Oat Cookies

A cozy classic that pairs perfectly with coffee or hot chocolate.

Ingredients

  • 2 1/2 cups rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 3/4 cup milk (dairy or non-dairy)
  • 3 ripe bananas, mashed
  • 1/4 cup maple syrup, honey, or brown sugar
  • 1/2 cup chopped walnuts (optional)
  • 1/2 cup chocolate chips (optional, but encouraged 😉)

Directions

  1. Combine the oats, baking powder, and cinnamon in a bowl.

  2. In a separate bowl, mix the mashed bananas, milk, and sweetener.

  3. Stir in the dry ingredients.

  4. Fold in the walnuts and chocolate chips, if using.

  5. Scoop onto a lined baking sheet.

  6. Bake at 370°F for 10–12 minutes.

  7. Cool slightly, then enjoy.

Thanks again for making the holiday season so special. I hope these recipes bring a little warmth to your winter — and maybe even inspire some new traditions.

See you in the stores soon,
Paul
