During November and December, I had the great privilege (and a lot of fun!) visiting all of our Urban Nature Store locations to share coffee, hot chocolate — and a few of my homemade treats. ☕🍫
Between bird chats and winter nature stories, many of you asked the same question:
“Paul… can we have the recipes?”
Well, I’m happy to share! Below are two of the most requested cookie recipes — simple, wholesome, and perfect for sharing with friends… or keeping all to yourself. No judgment here. 😉
🥜🍫 Oat Snickers Cookies (Most Popular!)
These cookies disappeared very quickly at our stores!
Ingredients
- 1 ripe banana, mashed
- 1/4 cup organic peanut butter (or any nut butter)
- 1 tablespoon pure maple syrup (optional)
- 1 cup rolled oats (sprouted or gluten-free if preferred)
- 1/3 cup dark chocolate chips
- 1/3 cup chopped organic peanuts
Directions

Mix the banana, peanut butter, and maple syrup in a small bowl.

Stir in the oats.

Fold in the chocolate chips and peanuts.

Scoop onto a lined baking sheet and gently flatten.

Bake at 375°F for 10–12 minutes.

Remove from the oven, sprinkle with flaky sea salt (optional but recommended), and enjoy.
🍌🌾 Banana Oat Cookies
A cozy classic that pairs perfectly with coffee or hot chocolate.
Ingredients
- 2 1/2 cups rolled oats
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 3/4 cup milk (dairy or non-dairy)
- 3 ripe bananas, mashed
- 1/4 cup maple syrup, honey, or brown sugar
- 1/2 cup chopped walnuts (optional)
- 1/2 cup chocolate chips (optional, but encouraged 😉)
Directions

Combine the oats, baking powder, and cinnamon in a bowl.

In a separate bowl, mix the mashed bananas, milk, and sweetener.

Stir in the dry ingredients.

Fold in the walnuts and chocolate chips, if using.

Scoop onto a lined baking sheet.

Bake at 370°F for 10–12 minutes.

Cool slightly, then enjoy.
